The reason Mount Monadnock in southern New Hampshire is very popular is for a lot of the reasons you cite. It's a good length for beginners, depending on which trail you take -- and there are lots of choices. The views are spectacular and there is some history to the mountain. It is highly recommended. There may be some camping at the base (you'd have to check the state park) but there is also camping in the area.
